My family love muffins and I love to make my Meyer Lemon Poppy Seed Muffins. They are light fluffy, and covered with a delicious lemon glaze.
These muffins are the perfect sweet treat any time of the day. You can also use regular lemons for these muffins and glaze.
What is a Meyer Lemon?
Meyer lemons are different than regular lemons, but still pack a wonderful tart flavor. Meyer lemons are originally from China and were brought the United States in the early 1900’s. The lemons are thought to be a cross between a lemon and a mandarin orange. The flavor is very similar to a lemon, but a bit sweeter – perfect for baking and cocktails! If you aren’t in an area that these can be grown make sure to nab a bag during the winter because they are gone before you know it!
Ingredeints
For Muffins:
- butter
- granulated sugar
- meyer lemon
- vanilla extract
- eggs
- meyer lemon juice
- all-purpose flour
- baking soda
- baking powder
- poppy seeds
- full-fat sour cream
For Glaze:
- powdered sugar
- meyer lemon juice
- fresh meyer lemon zest
- milk
Variations
Regular lemon juice and zest can be used in place of the meyer lemon. Also, limes can be used to make lime muffins or oranges to make orange muffins. The orange muffins will be much sweeter, but if you want some tart flavor you can use half orange and half lemon or lime.
I use salted butter in my Meyer Lemon Poppy Seed Muffin recipe, but if you are using unsalted butter you can leave the butter as is, or you can add ⅛ teaspoon of salt to the batter.
Instructions
For Muffins:
- Pre-heat oven to 400°F. Line a 12 cup muffin tin with liners and set aside.
- In a mixing bowl, mix the butter till light and fluffy. Add the sugar, zest, vanilla, lemon juice, and mix till smooth.
- Add the eggs one at a time mixing after each egg is added. Gently stir in the sour cream.
- In a bowl, whisk together the flour, baking powder, baking soda, and poppy seeds. Slowly mix the dry ingredients into the wet until it is just combined.
- Scoop batter into the muffin cups (about ยผ cup) per muffin. Place in oven and back 15 minutes. Allow muffins to cool for about 10 minutes before glazing.
For Glaze:
- Whisk together powdered sugar, lemon juice, lemon zest, and milk.
- Dip the tops of the muffins into the glaze or drizzle over the top. Allow the glaze to set.
