Have you ever tried poke cake before? If you haven't you need to hop on this train because they are delicious. They typically start with a simple cake base and, after baking, holes are poked (hence "poke cake") and a creamy filling is spread on top. The cake chills and then a layer of whipped cream is added to the top of the cake. This recipe uses crushed cookies and white chocolate as the garnish, and it is so yummy!
I use a boxed cake for this recipe because it is so simple. The combination for the citrus filling is lemon curd, white chocolate instant pudding, milk, and poppy seeds. I love the white chocolate with the lemon curd because it provides a creamy and rich consistency. As the lemon curd mixture is resting on the cake it creates a moist and delicious cake that is busting with lemon flavor. I use lemon cake for this recipe, but a white or yellow cake work great as well.
This cake is awesome because it is a show stopper, and the crushed cookies ad white chocolate topping are always one of the first things to get noticed. If you are a citrus lover this cake is not something you want to pass up!

What do you need to make Lemon Poppy Seed Poke Cake?
- boxed lemon cake mix (+required ingredients on box)
- lemon curd
- white chocolate instant pudding (vanilla works fine)
- milk
- poppy seeds
- whipped topping
- vanilla sandwich cookies
- white chocolate chips
- 9x13 cake pan
- hand mixer
How do I make Lemon Poppy Seed Poke Cake?
- Bake cake according to package instructions in an 9x13 in baking pan. Allow cake to cool for at least 30 minutes.
- When cake is almost cool, whisk together lemon curd, instant pudding, milk, and poppy seeds. Set aside.
- With the end of a long wooden spoon make holes all over the cake. The holes should be spaced and reasonably deep.
- Spread the lemon mixture over the top of the cake. Cover and set in the fridge for 45 minutes.
- Remove cake from fridge and top with the whipped topping. Garnish with crushed cookies and white chocolate chips.
- Store covered in the fridge when it is not being served.

- 3.9 oz box white chocolate instant pudding mix

- 1 tablespoon poppy seeds
