One type of margarita that doesn't get all the play is a beergarita. If you have not tried one before you must- perfect for warm evening on the deck. The first time I had a homemade beergarita I was at a friend bachelorette party and there was a giant jug for the party..... it has been love ever since.
A beergarita is essential a margarita, beer, and tequila- a simple, but delicious combination of flavors.
You can do more with the beergarita besides drink it! The citrus flavor with the beer makes a fantastic marinade for chicken. The sugar from the mix allows for a delicious char on the chicken and the citrus flavor is really bright and flavorful.
I add a few spices and then marinate, and the flavors are delicious. The chicken is so juicy and and it is one of my favorite meals to make during the warm summer months.
I like to load up my chicken with ripe avocado, tomatoes, onions, cotija cheese, and sour cream. The flavors are craveable and absolutely mouth watering.
What do I need to make Loaded Beergarita Grilled Chicken?
Chicken
- 1 cup margarita mix
- 1 cup lite beer
- ½ tbsp salt
- ½ tsp cumin
- ½ tsp garlic powder
- 3 tbsp olive oil
- 4 chicken breasts
Toppings
- Sliced Avocado
- Crumbled Cotija Cheese
- Sour Cream
- Chopped Onion
- Chopped Tomatoes
How do I make Loaded Beergarita Grilled Chicken?
- In a medium bowl, whisk together mix, beer, salt, cumin, garlic and olive oil. Place chicken into a large resealable bag and pour in marinade. Toss to coat. Allow chicken to marinate for at least 4 hours.
- Heat grill to medium heat.
- Grill chicken for 5-6 minutes per side, or until the chicken's internal temperature reaches 165° Fahrenheit (75° Celsius).
- Remove from grill. Tent with foil and rest for 2-3 minutes.
- Slice and top with desired garnishes
