I love grilled pork chops, and I love finding different methods to cook them using combinations of my favorite flavors.
One of my favorite flavor combinations is honey and curry. There was a bar that my husband and I played volleyball at for years that served a honey curry sauce with their wings, and I was crushed when they took it off the menu. However, it was motivation for me to create similar flavors at home.
Pork chops are great on the grill, and I use a simple spice mixture and an easy honey curry glaze to make one of the most flavor packed pork chops ever. I keep the curry a little mild in this recipe for my kiddos, but if you like more heat a little extra will not hurt anything.
That char on the pork gets me every time!
A use a simple bowl like this stainless steel bowl for my glaze, and this simple silicone brush for to spread it over the pork chops. I make sure to wait till the end to add the glaze because it will prevent the glaze from charring and burning.
These pork chops are just glistening with the honey curry glaze, and have just the right char from the grill for a sweet, spicy, and smokey flavor.

Why grill with mayo?
Grilling with mayo is one of my favorite tricks to juicy and flavorful meat. I use it anytime I make chicken or pork on the grill. Typically, I mix the seasoning with the mayo and toss the protein in the mayo to coat before grilling. The mayo allows meats not to stick to the grill as easily, it seals in the juices, and it allows the seasoning to stick to the meat better. When I learned the hack of using mayo when grilling it was a game changer!
What meat thermometer to you use?
My favorite thermometer is the ThermoPop from Thermoworks. I am an affiliate of this company because I love this product so much. It is my all-time favorite stocking stuffer during the holidays as well!
What is the correct temperature to cook pork?
The National Pork Board recommends cooking chops, roasts, loins, and tenderloin to an internal temperature of 145° F, followed by a three-minute rest.
Can I sub chicken for pork?
Yes you can. However, make sure you check the safe cooking temperatures for chicken.
Do you use raw honey?
I do not use raw honey when I made this, but you can. Make sure that you can stir the honey to ensure that the curry powder can be mixed in.

Grilled Honey Curry Pork Chops
Ingredients
- 6 Boneless Pork Chops
- 2 teaspoon curry, divided
- ⅓ cup mayo
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- ⅓ cup honey
Instructions
- Heat grill to medium-high heat. In a small bowl, mix honey and 1 teaspoon curry powder. Set aside.
- In a medium bowl, mix mayo with salt, pepper, garlic powder, and 1 teaspoon curry powder. Add pork chops and toss to coat.
- Grill pork about 4 minutes per side. Using a meat thermometer check temperature, and when pork is 135° brush each side of the pork liberally with the honey in the small bowl. Remove pork when it reaches 145° and transfer to a plate to rest for a few minutes.
- Brush pork with additional honey curry sauce and serve.
