The Best Meaty Chili

Oh hello my favorite cold weather food!

There is nothing in the world that speaks the start of winter to me than a big bowl of chili. I don't make chili till it gets cold, and look forward to the minute that a bit of chill is in the air. You can always tell when everyone is making chili because the store will immediately be sold out of all the chili powder and oyster crackers! 
 
This chili is filled with meat, beans, diced veggies, tomatoes, and spices. It has won multiple awards, and it my go to recipe. I rarely have a freezer without a few bags during the colder months of the year.

I love chili and it is one of my favorite meals to put together when we have company or when we are watching a Packer game. This chili cooks for a few hours stove top, but the wonderful thing about this recipe is that is easy to transfer to a slow cooker to complete the slow simmer. To me, quickly setting up my chili to slow cook gives me freedom, and it makes the house smell amazing! 
 
One of my favorite things about chili, besides eating it, it that it is such a regional meal. Example, I like to load mine with bean and tomatoes, but I know in some areas one or both of the ingredients with earn a side-eye for a chili faux pas. I grew up eating my chili without noodles or toppings. Now, I prefer some noodles, cheese, and sour cream when I enjoy my chili. In the area I live some people are team noodle, and some are shocked at the suggestion of a noodle in chili. I usually use elbow noodles, but there are camps of people who are strictly spaghetti noodles, and that is the typical noodle you would be served in a restaurant if it came with noodles.

Ingredients
 
 

  • 3 ½ - 4 lbs ground beef
  • 2 large jalapenos diced
  • 1 medium green pepper diced
  • 1 large white onion diced
  • 2 cloves garlic minced
  • 4-5 stalks of celery chopped
  • ⅔ cup chili powder
  • 2 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon cumin
  • 1 teaspoon black pepper
  • 1 tablespoon salt
  • 29 oz can chili beans (I use medium heat)
  • 32.5 oz petite diced tomatoes 
  • 14,5 oz can diced tomatoes
  • 28 oz tomato sauce
  • 28 oz can crushed tomatoes
  • Grated sharp cheddar
  • Sour Cream
  • Noodles
  • Crackers

Instructions
 

  • In a large pot, break apart ground beef and brown over medium heat.
     When meat is almost browned, add peppers, onions, celery and garlic. When meat is cooked and veggies are slightly tender add chili powder, garlic powder, cumin, pepper and salt.  Stir. 
  • Add beans to chili meat and stir. Add diced tomatoes and petite diced tomatoes and stir. Add tomato sauce and crushed tomatoes and (you guessed it) stir.
  • Cook on low heat for 4 hours, stirring every 20 minutes or so, or pour into a slow cooker and heat on low 2-3 hours. 
  • Ladle over warm noodles, top with cheese, sour cream, and crackers

    I like this chili a lot. I froze some of the leftovers and used them for chili cheese fries and on baked potatoes later.

    Chili, in order to be chili, has to be thick and rich in meat, tomatoes, beans and let's not forget spices. Yummy! So tummy warming and satisfying. And we are in the same camp as you are -- we put pasta in our chili making it heartier and thicker. You're making me hungry and it's not even time for breakfast.

    Doesn't this time of year just beg for dishes like this one? I am loving the addition of so much meat to your version of a great chili! All of the right flavours and seasonings are coming together in this one - very similar to my own! Yours looks very chunky though - yum!!!
