January is National Slow Cooker Month and I am celebrating with my Slow Cooker Creamy Chicken Bacon and Rice Soup is simple weeknight dinner. Hearty, creamy, and packed with the best ingredients like chicken, wild rice, and smoky bacon.
My family love soup and my Slow Cooker Creamy Chicken Bacon and Rice is incredible. It is the simplest recipe because everything goes into the slow cooker and in a few hours a rich and hearty soup is ready to enjoy!
This recipe uses a wild rice blend and it makes the soup very filling. The unique ingredient in my soup is the bacon.
The bacon gives a smoky flavory to this chicken soup. I also love topping the soup with crispy bits of bacon- delicious!
I use cooked shredded chicken in this recipe as well. I like to do this because it cuts down on cooking time and eliminates needing to shred the chicken halfway into the cooking.
Ingredeints
- cooked shredded chicken - I typically with poach chicken and shred it. I always have some in my freezer. Rotisserie chicken works as well.
- wild rice blend - Typically, a blend will have some combination of long grain brown rice, sweet brown rice, wild rice, red rice, black rice.
- small white onion
- carrots
- celery
- chicken broth
- whole milk - 2% milk is a great substitute in Slow Cooker Creamy Chicken Bacon Rice Soup.
- heavy cream
- all-purpose flour
- black pepper
- salt
- dried thyme
- garlic powder
- bay leaf
- cooked bacon- Using precooked packaged bacon is a nice shortcut.
Instructions
- Place chicken, rice, carrots, onion, celery, salt, pepper, garlic powder, and bay leaves into a 6 qt slow cooker.
- Add chicken broth and milk to the slow cooker. Stir.
- Cook on low for 3 hours, or until the rice is tender.
- During the last 30 minutes, whisk together the cream and flour. Add to the soup and stir. Add the bacon and cook to allow the soup to thicken.
- Ladle into bowls and top with additional chopped bacon. Serve.

Slow Cooker Creamy Chicken Bacon and Rice Soup
Ingredients
- 2 ½ cups cooked shredded chicken
- ¾ cup wild rice blend (not parboiled)
- 1 small white onion, diced
- 1 cup roughly chopped carrots
- ⅔ cup chopped celery
- 6 cups chicken broth
- 2 cups whole milk
- 1 cup heavy cream
- ¼ cup all-purpose flour
- 1 teaspoon black pepper
- 1 tsp salt
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
- 1 bay leaf
- 8 slices of cooked bacon, chopped (reserve some for topping)
