Slow Cooker Cream Cheese Chili Chicken

Slow Cooker Cream Cheese Chili Chicken is a easy weeknight meal. Shredded chicken cooked with beans, corn, tomatoes, and peppers. Seasoned and finished with cream cheese.

June is Dairy Month and since I live in Wisconsin it is always a great time to celebrate dairy! Typically, in June, there are events all over called "breakfast on the farm". They highlight dairy farming and food provided by dairy farmers- like cheese and ice cream!

This week I am working with a few friends to celebrate Dairy Month and will be sharing recipes featuring, you guessed it, dairy.

My Slow Cooker Cream Cheese Chili Chicken is one of my favorite weeknight meals. Simple, delicious, easy, and ingredients I always have on hand.

This chicken is packed with corn, beans, tomatoes, peppers, and a chili spice blend. It is finished with a creamy block of cream cheese. I love to serve this over rice with shredded cheddar on top and a green salad on the side. So good!

Slow Cooker Cream Cheese Chili Chicken in the slow cooker

Ingredients

  • boneless skinless chicken breasts
  • black beans
  • corn
  • Rotel
  • chicken broth
  • ranch seasoning packet
  • cumin
  • chili powder
  • onion powder
  • garlic powder
  • cream cheese
  • Shredded cheese, sour cream, and tortilla chips for topping

Ingredient Questions

Can I use chicken thighs?

Yes, chicken thighs will work great in this recipe as well.

Can I use a different type of bean?

Yes, any other type of canned variety will work great.

I do not love spice. Is Rotel too spicy?

For the amount this recipe makes it is not spicy. However, if you are very sensitive to spice you can use a can of petite diced tomatoes.

Can I use low-fat or fat-free cream cheese?

Low-fat cream cheese works well for this recipe, but I do not recommend fat-free. I have found that when it melts it does not result in a creamy texture.

Slow Cooker Cream Cheese Chili Chicken in the slow cooker

Instructions

  1. Place chicken breasts at bottom of the slow cooker.
  2. Add black beans, corn, and Rotel tomatoes. It is not necessary to drain the corn or the Rotel.
  3. Sprinkle the ranch packet, cumin, chili powder, onion powder, and garlic powder over the ingredients in the slow cooker. Pour chicken broth into the slow cooker.
  4. Place the cover on the slow cooker and cook on low for 6-8 hours. During the final 30 minutes of cooking remove the chicken and shred.
  5. Add the cream cheese to the slow cooker with the shredded chicken and cook the remaining 30 minutes.
  6. Serve in bowls with cheese, sour cream, and tortilla chips.
