Slow Cooker Beef and Barley Stew

Soup is my ultimate cold weather meal. It is a perfect day for me to share thing recipe since a large portion of the Midwest and East are getting snow this weekend!

It is also because today is National Soup Swap Day. I am sharing my recipe for Slow Cooker Beef and Barley Stew as part of the swap.

Slow cooker soups are a favorite of mine because I can put in all the ingredients, let it cook, and now feel that I need to be home tending to my soup pot. This recipe uses stew meat, hearty broth, herbs, veggies, and pearl barley. My secret ingredient to this recipe, which seems to always be my favorite ingredient with beef recipes, is a bull bodied red wine. It adds so much flavor. You can, of course sub for beef broth and I have tested this recipe sans wine, but I would say my preference is to include the wine. If you are not a red wine drinker, your local grocery store will sell single serve bottles of wine and those work perfectly. This is a simple stew, but it sticks to your ribs, and is perfect on a cold evening.

Ingredients
 
 

  • 2 lbs beef stew meat
  • ½ cup flour
  • 1 tablespoon salt
  • 1 tsp black pepper
  • 1 tablespoon olive oil
  • ⅔ cup chopped carrots
  • 2 stalks celery, chopped
  • 1 tsp fresh thyme, chopped
  • 1 small white onion, diced
  • 1 ¼ cups pearl barley
  • ½ cup dry red wine
  • 8 cups beef broth

Instructions
 

  • In a sealable bag, add beef, flour, salt, and pepper. Toss to evenly coat beef in the four. 
  • Place a skillet with olive oil over medium heat and add the beef in a single layer. Brown on all sides and move to slow cooker. You may need to do this in batches so the pan is not crowded. 
  • Add thyme, carrots, onions, celery, barley, wine, and broth to the beef in the slow cooker. Gently stir. 
  • Cook 6 hours on low, stir, and serve.

    Sometimes, I am a little bit behind...it was only recently that I discovered the delights of barley. Your soup looks amazing! I would be a very happy girl curled up by the fire with a bowl of this lovely soup.

    Such a flavorful and hearty beef and barley soup. I agree that a great wine can add amazing flavor to so many recipes. This is one for my weekly rotation. It is easy and delicious!
