Fresh watermelon and lime blended together and lightly sweetened make one refreshing summer dessert certain to become a fast favorite!
Summer Desserts Week is going strong on day 4, and I am really excited to share this east, cool, and refreshing treat with you today.
Watermelon Lime Granita is as easy as it comes when making a frozen treat. The ingredients are simple: watermelon, limes, and sugar. That is it! I love to make this recipe for company as well because chances of me screwing it up, and being left with not dessert option are at an all-time low.
Granitas the only "work" element of a granita is the stiring every 20-30 mintes to get the ice crystals that make this dessert so yummy. It is different than a slushy or snow cone type of dessert because it is done by hand with a fork. It does not take long, but you will want to make sure that you will be home to stir the treat. My kiddos love this sweet treat, and call it "frozen watermelon". Frozen treats are very popular in our house these days because summer is finally here after a cool and long spring! Pool days, sprinklers, and weekends at the lake are all ahead!

What should I do if I am using a watermelon with seeds?
If you can pick them out that will be helpful, but otherwise I recommend straining the watermelon after it is blended and before lime and sugar are added. A strainer like this one will work well.
Can I use something beside lime?
Sure, lemon or orange would both be delicious. If you use orange you can reduce the sugar to a few tablespoons since they are a sweeter citrus.
I left my granita too long and it is too difficult to stir with my fork- what should I do?
I would remove it from the freezer, let is sit for about 10 minutes, and then try to break apart and pieces that got too large. If the entire tray is frozen, let the granita sit till you can start to break it up with a fork.
It seems like it is taking my granita a long time to freeze- what should I do?
Wait a little long between stirs to give it time to come together. Wait 30-40 minutes versus 20-30.
I accidentally added too much sugar- what can I do?
I would add extra puree watermelon if you have more. If you do not have a lot I would add what you have an a little water. If it is too much for one pan- make a double batch (more to enjoy!).
How to I store the granita?
Store in the pan in the freezer and cover with foil. If you are serving it later you might need to left it sit on the counter for a few minutes before you serve.

Simple Watermelon Lime Grantia
Ingredients
- 4 cups fresh cubed watermelon
- 4 tablespoon fresh lime juice
- 1 teaspoon fresh lime zest
- ¼ cup sugar
Instructions
- Puree watermelon using a food processor or a blender.
- Add sugar, lime juice, and lime zest. Pulse several times to mix into the puree.
- Pour mixture into an 8x8 metal pan.
- Place in the freezer. Every 20 minutes scrape the solids with a fork until it becomes course and crystallized.
- Scoop into dishes, add desired garnishes (if any), and enjoy.
