Bomb Pops are a classic summer treat. Bomb Pop Jello Shots are a new adult twist on a summer favorite.

#SummerDessertsWeek is still going strong, and I am still drooling over some of the yummy treats posted yesterday! It will be tricky to decide what to try first!

Today, I am switching gears a bit from traditional desserts and sharing something a little boozy and a little nostalgic. Bomb Pops are one of my favorite childhood treats in the summer (I still love to have one on the 4th!), but sometimes a want a little kick to my treats. My Bomb Pop Jello Shots give the nostalgic flavors of a Bomb Pop, but packed into an adult friendly bite.

Traditionally, the Bomb Pop has flavors of cherry, citrus, and blue raspberry. Thanks to #SummerDessertsWeek sponsor, Adams Extract, and their delicious Lemon Extract I was able to create to tangy and bright white middle layer. What Do You Need To Make Bomb Pop Jello Shots?

  • Vodka
  • Sugar
  • Cherry Jello
  • Blue Raspberry Jello
  • Gelatin Packet
  • Sweetened Condensed Milk
  • Lemon Extract
  • Water
  • 2 oz Containers for the shots
  • Small Sauce Pan
  • Mixing Bowls with Pour Spout
  • Mixing Spoons

Frequently Asked Questions:

Can I use different flavors of jello?

Sure! Any colors will taste good. If you are layering I would make sure to contrast the colors so the layers are well defined.

What can I use beside sweetened condensed milk?

An instant pudding used in place of the milk will work well. Use the same measurement ratio.

I didn't wait long enough and my colors are slightly mixing- what should I do?

Get the shots in to the fridge quickly. Because each layer is warm when added some mixing can happen if you pour the next layer too early. I recommend making sure to let each layer set the full hour.

It seems like the white layer takes longer to set?

That is true. When testing this recipe I found that the white citrus layer takes a little longer, and I recommend letting it set for an additional 15-20 minutes.

How far in advance can I make my jello shots?

I would say about a week, and they will still taste good and have a good consistency. I store mine in the plastic containers in a gallon sealable bag in the fridge.

Can I make these kid friendly?

For sure! Just replace the vodka with water.

Bomb Pop Jello Shots

Ingredients
 
 

Blue Layer:

  • 3 oz box blue jello
  • 1 cup boiling water
  • ½ cup vodka
  • ½ cup cold water

White Layer:

  • 1 tbsp Unflavored Gelatin Powder
  • ½ cup cold water
  • ½ cup boiling water
  • ½ cup vodka
  • 1 teaspoon lemon extract
  • ⅓ cup sweetened condensed milk

Red Layer:

  • 3 oz cherry jello
  • 1 cup boiling water
  • ½ cup cold water
  • ½ cup vodka

Instructions
 

Blue Layer

  • Follow preparation instructions for jello on the back of the box. When it is time to add the water add ½ cup cold and ½ cup vodka. Using a mixing bowl with a pour spout fill each cup ⅓ full. Place in the fridge for an hour to set.

White Layer

  • Place gelatin in a mixing bowl and add cold water. Allow gelatin to sit and absorb the liquid for 2-3 minutes. Stir in the boiling water, extract, vodka, and condensed milk. Using a mixing bowl with a pour spout fill each cup ⅓ full. Place in the fridge for an hour to 1 ½ to set.

Red Layer

  • Follow preparation instructions for jello on the back of the box. When it is time to add the water add ½ cup cold and ½ cup vodka. Using a mixing bowl with a pour spout fill each cup ⅓ full. Place in the fridge for an hour to set.
  • Place caps on set and finished jello shots. Store in the fridge.
