Grilled Steak and Potato Salad is a meal all in one bowl! Tender grilled steak, seasoned roasted potatoes, fresh veggies, blue cheese, and a tangy red wine vinaigrette make this on amazing salad!

This steak salad is one of my favorite meals. I love a good steak fresh off the grill. Well seasoned, and cooked perfectly- it gets me feeling those summer vibes.

I love traditional steak and potatoes, but I also love a little bit of green with my steak and potatoes. I work under the motto of, just put it on a salad. It is and easy way to get those extra veggies.

This salad is so hearty and you do not have to worry about eating it now only to get hungry again in a few hours. My Steak and Potato Salad is loaded with tender seasoned steak, roasted potatoes, red onions, tomatoes, and blue cheese. I love a red wine vinaigrette with this salad because it is tangy and it cuts some richness from the meat, but the red wine is a delicious partner with the steak..

I like to cook my steak to medium rare- medium, but you can adjust cooking time to what fits your desires. I recommend using a meat thermometer to for your steak because it will help ensure that the steak is not over cooked.

Like I said, I am in love with the ThermoPop from ThermoWorks! It has been my favorite for over 6 years!

My other favorite part of this salad is the delicious blue cheese sprinkled over the top! If you are not a fan of blue try a bit of Parmesan or feta.

What do you need to make Grilled Steak and Potato Salad?

  • olive oil
  • paprika
  • alt
  • black pepper
  •  red potatoes,
  • New York Strip steak
  • salad greens
  • red onion,
  • cherry tomatoes 
  • blue cheese crumbles
  •  red wine vinegar
  • dijon mustard
  • meat thermometer- I am in love with the ThermoPop from ThermoWorks!

How do you make Grilled Steak and Potato Salad?

  1. Preheat oven to 400 degrees. Mix together oil, paprika, salt and pepper. Stir the seasoning mix into the potatoes. Place potatoes evenly on a baking sheet. Roast for 30 minutes until golden and crispy.
  2. While potatoes are season the steak with salt and pepper. Heat grill to high and grill steak 4-5 min minutes per side. For medium rare, grill steak until is reaches an internal temperature of 135°F.
  3. Remove steak from grill and allow it to rest for a few minutes. Slice into thin strips about ½- ¾ inch thick against the grain.
  4. While steak rests, whisk the ingredients for the vinaigrette and set aside.
  5. Divide salad greens between 4 plates. Top with sliced steak, tomatoes, onion, roasted potatoes, and blue cheese. Drizzle the vinaigrette over the top of the salad and serve.

Ingredients
  

Salad

  • 2 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 8 red potatoes, halved
  • 16 oz New York Strip steak
  • 8 cups salad greens
  • ½ medium red onion, sliced
  • 1 cup cherry tomatoes halved
  • ½ cup blue cheese crumbles

Dressing

  • ⅓ cup olive oil
  • 2 tablespoon red wine vinegar
  • 2 ½ teaspoon dijon mustard

Instructions

    There is nothing easier or more delicious than a steak salad in the heat of summer!! It's one of our go to dinners, for sure! Can't wait to try this salad this summer.
