It is time to break out the grill and this Orange Pesto Skirt Steak is packed with fresh citrus flavors and salty herby pesto in the marinate. This is a unique and delicious steak recipe that will be on the meal rotation all summer long.
Grill season is here and I love grilling out meals because it is quick, easy, and little clean-up. We typically grill all year, even in the snow, but there is something about summer grilling. The smells, the sounds, the warm breeze....
This recipe for Orange Pesto Skirt Steak needs to be added to your grilling menu. Skirt steak is fantastic on the grill because it cooks quickly, but is still a very flavorful and tender cut of meat. I love to marinate it because it is a little thinner the marinate really soaks in and it gives flavor packed bites.
Citrus and pesto are a great combination because of the fresh zesty citrus is a great compliment to the herby, garlic, salty pesto. After marinating in the fridge for a few hours and then a few minutes on a hot grill give just the right char to this flavorful marinated steak.
This is honestly one of my all-time favorite recipes to make on the grill, and it pairs so well with multiple different types of serving. I typically serve it with grilled veggies, but it is yummy over a salad, on a bun, or even in a tortilla.
I like to cook my steak to medium rare to medium. Medium rare is 135°F, but you can grill to your desired temperature. I always recommend investing in a meat thermometer. If you do not already use one it will make sure a big difference in the ability you have to get your preferred temp on your food cooked on the grill, stove top, or oven. My all-time favorite meat thermometer is from ThermoWorks and it is the ThermoPop. I love the colors, and this thermometer is fantastic. It is back-lit, which is great for grilling in the evening, and it has a fantastic warranty.

- orange juice
- fresh orange zest
- pesto
- garlic
- salt
- black pepper
- skirt steak

How do you make Orange Pesto Skirt Steak?
- Combine orange juice, zest, pesto, salt and garlic. Place steak and marinate into a sealable bag and place in fridge to marinate for 8 hours*.
- When ready to grill, remove steak from bag and discard marinate.
- Heat grill to high and grill steak 3-4 min minutes per side. For medium rare temp to 135°F.
- Remove meat from grill and allow it to rest for a few minutes. Slice into thin strips about ½- ¾ inch thick against the grain. Serve immediately.

It is so delicious! I have actually used both in this recipe. The fresh is my favorite, but I will use Simply Orange if I am making a larger batch, or have it on hand. Both resulted in delicious flavors- great question!
