Add oats, coconut milk, yogurt, honey, zests, and ½ cup dragon fruit into a jar or storage container with a lid. Stir ingredients together. Place in the fridge overnight.
When ready to eat, stir the oats. Additional coconut milk can be added if the mixture becomes too thick. Top with remaining dragon fruit and serve.
Notes
Oats will be good in the fridge for 3-4 days. Red dragon fruit stains easily. Make sure you use a cutting board and keep away from fabric.
