Apple Cider Doughnuts Muffins are a favorite fall treat. Filled with apple cider and cinnamon flavors and rolled in a sweet cinnamon and sugar coating.

Apple Cider Donut Muffins are one of my favorite things to grab from the orchard. Sweet with yummy apple flavors and a cinnamon sugar coating makes it a perfect for fall.
There is nothing better than a fresh pack, still warm, and a cup of coffee.
However, I do not make donuts at home, and have made my own version as a muffin. These taste so similar to an apple cider donut, and even have the sugary dusting on the outside of the muffin.
My family loves these and they make the house smell amazing. Fall baking creates the best smells!
I am loving my vanilla extract paste from Taylor and Colledge USA. I love the paste because it can substitute on a 1:1 ratio with liquid extract, it is organic, and the flavor is pronounced in my baked goods. I love a strong vanilla, and this product does not disappoint!
Ingredeints
- apple cider
- vegetable oil
- granulated sugar
- light brown sugar
- eggs
- vanilla paste or extract
- all-purpose flour
- ground cinnamon
- baking powder
- baking soda
- salt
- melted butter
- 12-cup muffin tin
Instructions
- Preheat your oven to 375° and place rack in the middle of the oven. Grease a 12-cup muffin pan and set aside.
- Pour the apple cider in a small pot and bring to a boil. Reduce the heat to medium and simmer until the liquid is reduced to 1 cup. Set aside to cool.
- Using a stand or handheld mixer, mix the oil with the ½ cup white sugar and ¼ cup brown sugar. One at a time, add the eggs,, mixing well after each. Add the vanilla and mix.
- In a medium-size bowl, whisk together the flour, 1 teaspoon cinnamon, baking powder, baking soda, and salt. Slowly add the dry ingredients to the wet while the mixer is on low speed. Next, slowly add the reduced cider and beat to combine. Divide the batter evenly among the prepared muffin cups and transfer to the oven. Bake about 15 minutes. Remove from the oven and cool for about 8-10 minutes.
- While Apple Cider Donut Muffins cool, mix ½ cup white sugar with 1 teaspoon cinnamon. Once cool, brush the muffin with butter on top and sides. Roll in the sugar mixture and set on a drying rack.
- Store in a covered container.
