My Antipasto Eyeballs are a creepy version of a charcuterie platter. Fresh mozzarella wrapped in sliced ham, topped with black olives, and finished with pesto and sundried tomatoes.
Who doesn't love a good antipasto platter? My Antipasto Eyeballs are a creepy addition to any snacking plate.
These appetizers are so simple to make and require only a few ingredients. Ham, mozzarella, olives, and pesto. So simple, but everyone will comment on how positively creepy they look!
I love how the ham and sundried tomatoes create the perfect bite to hold the fresh mozzarella. It is delicious. Sometimes, I like to add a little balsamic reduction to the top of the olives as well.
Ingrediens
- ciliegine mozzarella balls- these are slightly larger than mozzarella pearls.
- thin deli ham
- sliced black olives
- basil pesto - it is also delicious with a few drops of balsamic reduction as well!
- sundried tomatoes- can be packed in oil or dried
Instructions
- Tear ham slices into quarters.
- Arrange ham around the mozzarella cheese.
- Top with a black olive slice and add a small dollop of pesto to the center.
- Garnish with sundried tomatoes. Serve.

- 9 ciliegine mozzarella balls

- 1 tablespoon basil pesto
- ¼ cup sundried tomatoes
Instructions
- Tear ham slices into quarters.
- Arrange ham around the mozzarella cheese.
- Top with a black olive slice and add a small dollop of pesto to the center.
- Garnish with sundried tomatoes. Serve.
