Weeknight Minestrone Soup is a hearty vegetarian meal, quick to prepare, and absolutely delicious! Filled with lots of fresh veggies cooked in a vegetable stock, studded with pasta and spinach, and a touch of aged shaved Parmesan.

Homemade soup is one of my all-time favorite meals. We typically have soup at least once a week, and we love to have variety. My Weeknight Minestrone Soup is a so quick and easy. This is one hearty vegetarian soup! Veggies, pasta, stock, and cheese make an absolutely unforgettable meal.

This soup is great because it can be made for a crowd, and is always a crowd pleaser! Another thing I love about this soup is that it is great heated for lunch. I love how the flavors get even rich after sitting overnight, and I am always looking forward to lunchtime when I know this soup is on the menu.

So what exactly in minestrone? Traditionally, it is a thick vegetable and bean soup that includes some type of starch, like rice or pasta. There is not really a right or wrong way to make this soup and there is a "kitchen sink" approach to the type of veggies. Typically, Parmesan cheese, and sometimes the rind of the cheese, is included in the soup. Whatever your methods- the result is super tasty!

What do you need to make Weeknight Minestrone Soup?

  • Small Zucchini
  • Carrots
  • Celery
  • Onion
  • Kidney Beans
  • Great Northern Beans
  • Canned Petite Diced Tomatoes
  • Vegetable Stock
  • Salt
  • Pepper
  • Dried Oregano
  • Dried Parsley
  • Dried Basil
  • Butter
  • Olive Oil
  • Fresh Spinach
  • Ditalini Pasta (or other small pasta)
  • Parmesan Cheese

How do I make Weeknight Minestrone Soup?

  1. In a soup pot, heat butter and oil over medium heat. Place onion, carrots, and celery in the pot and cook for 5 minutes until the veggies begin to soften.
  2. Add the zucchini, beans, tomatoes, beans, stock and seasonings. Bring to a low simmer and cook for 10 minutes.
  3. Add the Parmesan, pasta, and spinach. Cook till pasta is tender.
  4. Ladle into bowls and top with additional Parmesan cheese.

Ingredients
 
 

  • 1 tablespoon Butter
  • 1 tablespoon Olive Oil
  • ⅔ cup Chopped Carrots
  • ½ cup Chopped Celery
  • 1 Medium Onion, Chopped
  • 1 Small Zucchini, chopped
  • 16 oz Canned Kidney Beans, rinsed and drained
  • 15.5 oz Canned Great Northern Beans, rinsed and drained
  • 28 oz Canned Petite Diced Tomatoes
  • 6 cups Vegetable Stock
  • ½ teaspoon Salt
  • ½ teaspoon Pepper
  • 1 teaspoon Dried Oregano
  • 2 teaspoon Dried Parsley
  • 1 teaspoon Dried Basil
  • 2 ½ cups Fresh Spinach
  • 1 cup Ditalini Pasta or other small pasta
  • ¼ cup Shaved Parmesan Cheese (+ extra for topping)

    Why do I always think minestrone is a complicated restaurant only dish? I am pretty sure I have all of the ingredients to make this for dinner in the cupboard.
