Slow Cooker Chicken and Barley Soup is perfect for a winter day. Tender white meat chicken cooked in a hearty soup carrot, celery, onions, tomatoes, and pearl barley.

This time of year my body craves simple food, vegetables, and lean meats. Over the holidays I feel like there isn't enough greenery in my diet..... cookies, candy, rich food, drinks..... there is no better time than January to give my body a restart.

I am not a big resolutions person, but I believe in goals and ideals to help guide us into the new year. This year I am striving to provide my readers with new and delicious recipes that are easy and accessible. Complicated is never my goal, and I love to create food that take out all the guess work- just yummy results.

For some people, I know that a goal of simple healthy food is a popular resolution. and my Slow Cooker Chicken and Barley Soup is a perfect addition to a dinner rotation. This soup is made in the slow cooker, and it is so hearty and packed with veggies and lean protein. I use chicken, chicken broth, carrots, celery, onion, and tomatoes to slow cooker before adding pearl barley. As the barley breaks down and the broth gets nice and thick. The veggies are tender, and the chicken pieces easily fall apart. I keep my seasoning simple in this soup- poultry seasoning, salt, and black pepper.

I am a big fan of my Slow Cooker Beef and Barley Stew and my chicken version is just as delicious!

What do I need to make Slow Cooker Chicken and Barley Soup?

  • Chicken Breasts
  • Chicken Broth
  • Carrots
  • Onions
  • Celery
  • Petite Diced Tomatoes
  • Pearl Barley
  • Poultry Seasoning
  • Salt & Pepper
  • Slow Cooker

How do I make Slow Cooker Chicken and Barley Soup?

  1. Place chicken, onion, carrot, celery, tomatoes, chicken broth, poultry seasoning, salt, and pepper into a slow cooker.
  2. Stir and cover. Cook on low for 5 hours or high for 2 hours.
  3. Remove cover and add barley. Cook for an additional hour on high, or 2 hours on low.
  4. The soup might be pretty thick and you can add additional broth is needed.
  5. Serve and enjoy.

Ingredients
 
 

  • 1 lb boneless skinless chicken breasts, cut into bite sized pieces
  • 1 medium white onion, diced
  • 14.5 oz can petite diced tomatoes
  • 3 celery ribs, sliced into pieces
  • ⅔ cup sliced carrots
  • 5 cups chicken broth
  • ⅔ cut pearl barley
  • 1 ½ teaspoon poultry seasoning
  • 1 ½ teaspoon salt
  • 1 teaspoon black pepper

Instructions
 

  • Place chicken, onion, carrot, celery, tomatoes, chicken broth, poultry seasoning, salt, and pepper into a slow cooker.
  • Stir and cover. Cook on low for 5 hours or high for 2 hours.
  • Remove cover and add barley. Cook for an additional hour on high, or 2 hours on low.
  • The soup might be pretty thick and you can add additional broth is needed.

    If I am using already cooked chicken would I add that at the same time as the barley?
