Skillet Sweet and Sour Meatballs with Pineapple are a 30 minute one-pot meal that the entire family with love. Hearty beef meatballs, sweet pineapple, and fresh peppers cooked is a sweet and sour sauce is an instant weeknight dinner favorite.
Weeknight dinners got even better with Skillet Sweet and Sour Meatballs with Pineapple. This is one of my kids favorite meals, and they get super excited when it is on our weekly menu. This meal is filled with meatballs, peppers, and pineapple. The sauce is sweetened with brown sugar and pineapple juice, but offset with a little vinegar to make a sweet and tangy flavor. I love to serve this over brown rice, but it is also delicious with pasta, extra veggies, or all alone.
I typically use froze meatballs for this dish because it is so convenient, and we like them. However, you can use homemade meatballs, but you will want to make sure that you cook them prior to making the dish and not put them in the sauce to cook.
This recipe is great because you can use turkey meatballs or beef or plant-based depending on your preferences. Whatever you choose, you will love all the great textures and the sweet and savory flavors in this meal. Also, if you like extra veggies you could add an additional bell pepper, or event some fresh broccoli to the skillet when you add the peppers!
My other favorite thing about this meal is that it is ready in 30 minutes. No rushing around the kitchen, no extra chopping, no over the top prep- simple and 30 minutes between me and a warm meal.
This dish also makes excellent leftovers, and I love bringing to work because I look forward to lunch- even more than I already do!
