I love fajitas. Chicken, steak, shrimp, pork, veggie....they are all delicious. One of my favorite things is the delicious char with the spices in the meat and veggies. There is so much flavor in those little bits of char, and I love it.
This particular recipe is for chicken fajitas, but you could use a different protein like steak or pork in place of the chicken. My marinade for this recipes is spice and citrus heavy, and it creates a delicious aroma as it cooks. I like to use chili powder, cumin, garlic, and lots of lime! I love the combination of the spices with the zesty citrus!
The BEST thing about this recipe, besides the yummy flavor, is the clean-up! My husband and I are active dish-washing dodgers (I mean really likes it), and for this recipe everything is cooked on a lined sheet pan making for a really easy clean-up!
I love to serve this meal with flour or corn tortilla, sour cream, and fresh cilantro!
What do you need to make Sheet Pan Chili Lime Chicken Fajitas?
- chicken breast tenderloins
- yellow bell pepper
- red bell pepper
- white onion
- olive oil
- ground cumin
- chili powder
- garlic powder
- onion powder
- salt
- black pepper
- hot sauce
- fresh lime zest
- whole lime
- Tortillas, sour cream, fresh cilantro

How do I make Sheet Pan Chili Lime Chicken Fajitas?
- Slice chicken tenderloins in half lengthwise. Place chicken in a sealable bag with the peppers and onion. Set aside.
- In a bowl, mix together the remaining ingredients to create a marinade.
- Pour the marinade into the bag. Push out the air and seal. Use your hands to coat the chicken and veggies in the marinade. Set the chicken in the fridge and allow it t marinate for 30 minutes - 2 hours. 2 hours is recommended for maximum flavor.
- Line a sheet pan with foil. Pre-heat oven to 375°F. Place chicken and veggies evenly on the sheet pan. pour any extra marinade over the meat and veggies.
- Bake for 35-40 minutes or until the chicken reaches an internal temperature of 165°F.
- Remove from oven and serve with tortilla, sour cream, and fresh cilantro.
Funny story. When I was pregnant I didn't like the smell of fajitas. I love it now, and love the taste. I went for almost 2 years before I ate fajitas! It is so funny to me because now they are one of my favorite things to eat, and I am happy they are , again, in my life and stomach.
