I adore a good gyro, and it was always my forever favorite after-bar food in college and in my 20's. Now there is a lot less bar hopping happening with two little boys, but I can still get my gyro fix with this incredible omelette.
My Gyro Omelette is a 3-egg omelette that is filled with all the goodies needed for a gyro. Gyro meat (typically a blend of lamb and beef, or just lamb), tomatoes, feta, mozzarella, and onion. I season this omelette with salt, pepper, dried oregano, and dried parsley.
I like to serve my omelette with a nice big spoonful of tzatziki sauce on top. Tzatziki sauce is a yogurt cucumber sauce, and it is super creamy. Add a little onion, tomato, and feta, and I am in love this the flavors and ingredients in my Gyro Omelette.
WHAT DO YOU NEED TO MAKE A GYRO OMELETTE?
- large eggs
- milk
- salt
- black pepper
- dried oregano
- dried parsley
- butter
- prepared gyro meat
- cherry tomatoes
- white onion
- shredded mozzarella cheese
- crumbled feta cheese
- tzatziki sauce
HOW DO YOU MAKE A GYRO OMELETTE?
- In a bowl whisk together eggs, milk, salt, pepper., oregano, and parsley.
- In a skillet add 1 teaspoon butter over medium-low heat. Once melted, add the egg mixture.Gently push in the sides of the eggs to help the uncooked egg to reach the heat.
- Once the top of the eggs have set and are not liquidy add the gyro on one side. Follow with the onions, tomatoes, and cheeses. .
- Allow cheese to melt for a minute.
- Carefully, fold the omelette in half. Allow omelette to finish cooking for about 2-3 minutes. Top with tzatziki, onion, tomatoes, and feta cheese. Serve immediately.
TIPS TO MAKE A DELICIOUS OMELETTE!
Prep the filling in advance so that you are ready to add it when your eggs set.
A rule of thumb is about ½ cup of filling for a 2 egg omelette. This can be increased or decreased. I like my omelette pretty full, but ingredients can be scaled back.
Not all omelette are made the same. Sometimes ingredients are mixed into the eggs and some are reserved for topping versus the method used in this recipe.
Keep the pan temperature medium-low. If it is too hot the outside of the omelette will over cook and the inside will be raw.
OMELETTES AND CHEESE
Cheese is important to any omelette, but it is important to find a melty cheese and pair it with a cheese that does not melt as easily.
I like to use mozzarella and feta in this omelette because the mozzarella is very mild and it allows feta to stand-out.
Monterrey jack would be another great option for this omelette in place for mozzarella cheese.
SUBSTITUTION OPTIONS
No gyro meat, or not a fan? No problem! Shredded chicken works great, as does bacon, sausage or ground beef. No meat- try mushrooms!
Red onion work in place of a white or sweet onion.
As, I said before monterrey jack would be another great option for this omelette in place for mozzarella cheese. Colby or american cheese work well too!

Ingredients
