Irish Soda Bread Muffins are a St. Patrick's Day menu tradition, and a great addition to a holiday meal. Buttery muffins filled with flavors from rich buttermilk, caraway seeds, and raisins.
St. Patrick's Day is almost here and my mouth is already watering thinking about the menu! One of my annual staples are my Irish Soda Bread Muffins.
Soda bread uses baking soda as the leavening agent in the bread, and there are many different varieties, not only from Ireland, of this bread. Sometimes you see the bread in loaf form cut in to slices, circle loaf cut into wedges, and even with raisins or currants.
My Irish Soda Bread Muffins create a biscuit like texture to the bread which my family really enjoys. The final brush of the butter and buttermilk gives these muffins a delicious and crisp buttery top.
Ingredients
- all-purpose flour
- white sugar
- baking soda
- baking powder
- salt
- caraway seeds
- raisins
- butter
- buttermilk
- egg
Instructions
- Preheat oven to 375°F. Lightly grease a 12-cup muffin pan with cooking spray.
- In a large bowl, mix together flour, sugar, baking soda, baking powder, salt, caraway seeds, raisins, and butter.
- The mixture will be crumbly, and will bind together when wet ingredients are added.
- Stir in ⅔ cup buttermilk and egg and mix till combined.
- Divide the dough evenly into the muffin tin. Mix 2 tablespoon of melted butter with 2 tablespoon of buttermilk. Brush over the tops of the muffins. Bake for 20 minutes. The Irish Soda Bread Muffins should be lightly browned on top.
