Slow Cooker Corned Beef and Cabbage

My Slow Cooker Corned Beef and Cabbage is seasoned corned beef slow cooked with potatoes, carrots, and cabbage. Apple cider is the secret ingredient to this traditional St. Patrick's Day meal.

January is National Slow Cooker Month and I am joining with a few friends to celebrate all things slow cooker. This week you will find many different slow cooker recipes from other bloggers from all over the county- a perfect time to fill your weekly meal plan! Check out the recipes below the recipe!

Corned beef is one of my favorite meal to make in the slow cooker. The meat is so tender, but it needs a long time to cook. This makes the slow cooker a perfect kitchen appliance to do the job.

I love this recipe because it takes the classic ingredients: corned beef, potatoes, carrots, and cabbage and slow cooks it with a touch of apple cider. Simple, and delicious. I like to use the apple cider because it brings a slight sweetness, but is never overpowering.

St. Patrick's day is not complete without corned beef and cabbage, but I love to make it year-round. We love to use the leftovers to make corned beef hash or Rueben sandwiches.

My Slow Cooker Corned Beef and Cabbage is also versatile. It is easy to make corned been with no cabbage if that is what you prefer, or you can use additional veggies. I love the standard carrots and potatoes, but onions are a delicious addition.

Ingredients

  • Corned Beef Brisket
  • Yellow Potatoes
  • Carrots
  • Cabbage
  • Apple Cider
  • Slow Cooker

What is Corned Beef?

Corned beef is a beef brisket that is soaked in brine and cured with seasonings. Sodium nitrate which is an ingredient in the curing process and it gives the brisket a unique pink color. Corned beef comes in multiple cuts such as, round roast, flat cut brisket, and point cut brisket. I prefer to use the flat cut brisket because I like the continuity in the size.

Serving Suggestions

One of my favorite dishes to serve next to my corned beef is my Irish Colcannon with Bacon or my Irish Cheddar Ale Mac and Cheese, and of course a nice Irish stout to wash it all down!

I also love to serve this with a side of creamy horseradish sauce. My favorite brand is Woeber's, but you can make it at home using this recipe for Creamy Horseradish Sauce from Savory Experiments.

Instructions

  1. Place cabbage in the bottom of the slow cooker.
  2. Add carrots and potatoes on top of the cabbage.
  3. Place corned beef over the veggies. Sprinkle spice packet over the meat. Pour apple cider over meat and veggies.
  4. Cover and cook 8 hours on low.
  5. Remove beef, slice, and serve with the vegetables.

Tips for Cooking Corned Beef In The Slow Cooker

  • It is important to cook the corned beef on a low heat setting. It might seem like using the high heat setting will decrease cook-time. While it can decrease the cook-time it can leave to the corned beef not becoming as tender. Make sure that the corned beef is given enough time to cook so it is tender.
  • If you do not want to slow cook the corned beef check out my Easy Corned Beef and Cabbage recipe made in a dutch oven. My Guinness Irish Beef Stew is also a great option!
  • Corned beef comes pre-brined and includes a seasoning packet to sprinkle over the meat. No additional seasoning is necessary.
  • The cabbage, potatoes, and carrots will be tender so be careful when removing them from the slow cooker. If you like a firm veggie, add the vegetables half way into the cook time. I, personally, like mine nice an tender and love the flavor from the veggies cooking in the juices all day.
  • When slicing the meat make sure that you slice against the grain. The meat will be less chewy and more tender.

Ingredients
 
 

  • 3 ½ -4 ½ lbs corned beef brisket with spice packet
  • 1 lb small yellow potatoes, halved
  • 3 carrots, quartered
  • 1 medium head of green cabbage, cored and cut into small wedges
  • 1 ½ cups apple cider

Instructions
 

  • Place cabbage in the bottom of the slow cooker.
  • Add carrots and potatoes on top of the cabbage.
  • Place corned beef over the veggies. Sprinkle spice packet over the meat. Pour apple cider over meat and veggies.
  • Cover and cook 8 hours on low.
  • Remove beef, slice, and serve with the vegetables.

    Bill used to nose-up at the New England dinner before I started putting horseradish and grainy mustards on the table to serve with. Otherwise it was too plain for him. But that makes it work for everyone whether they like plain or spicy. I like doing a huge corned beef too so I can leftovers to make corned beef panini or reubens the next day. I do love cooking once and eating twice. What was it the Queen of Hearts said? "Curtsy while you speak, it saves time." Cooking extra saves time too.
