My Grilled Ribeye with Garlic Blue Cheese Mustard Sauce is one of my favorite recipes. Perfectly cooked steak topped with a rich a creamy blue cheese mustard sauce.
My husband and I have an annual tradition of grilling ribeye steaks on Valentine's Day. Since we live in Wisconsin it is always a gamble on that the weather will be like when we fire up the grill. We created Gilled Ribeye with Garlic Blue Cheese Mustard Sauce because it incorporated a few of your favorite flavors to pair with steak.
Now, it does not have to be Valentine's Day to make Gilled Ribeye with Garlic Blue Cheese Mustard Sauce- it is amazing anytime of year and we love to make cook this recipe year-round.
I love mustard and blue cheese, and the combination when mixed with a steak fresh off the grill is amazing! The sauce is super simple and can be made while the steaks rest.
Ingredients
- Heavy cream
- Dijon mustard
- Garlic paste or fresh garlic
- Blue Cheese crumbles
- Ribeye Steaks
- Olive oil
- Salt and Pepper
Instructions
- In a rimmed skillet, whisk Dijon, blue cheese, cream and garlic over medium heat till it lightly simmers. Turn heat to low and allow sauce to slowly reduce by half. Remove from heat and cover to keep warm.
- Heat grill to medium high heat. Rub steaks with olive oil and season with salt and pepper.
- Place steaks on the grill and cook 4-6 minutes before flipping. Cook an additional 4-6 minutes on the opposite side. The internal temperature should register between 130-135 for a medium rare steak.
- Remove steak from grill and allow it to rest for 4-5 minutes. Plate and top with sauce and a few blue cheese crumbles.

Nothing screams celebration more than ribeye steak and we certainly love our blu cheese. We like to make a special dinner for Valentine's Day and we hate trying to fight the crowds. This certainly would be the typed of dinner we'd make and enjoy with that special sauce and of course a great bottle of wine.
