Grilled Dijon Pork and Apple Foil Packets

Grilled Dijon Pork and Apple Foil Packets are a delicious family favorite. Tender hearty pork chops, fresh apples, and sweet yellow onions topped with a Dijon honey mustard and grilled.

I am excited to work with Wisconsin Pork Producers Association again, and share one of my favorite recipes: Grilled Dijon Pork and Apple Foil Packets.

Cooking foil packet meals over the grill of campfire is a delicious way to have flavor packed meals with easy clean-up. I love finding a meal that is camping friendly that my family loves!

Cooking pork in packets is an excellent way to use for in a camping recipe, or for a quick meal at home cooked over the grill- or even in the oven.

Pork is a super versatile protein and the options for flavor combinations for foil packets is endless!

Why choose pork

Besides being affordable and delicious, pork is an excellent source of lean protein and other key-nutrients.

Pork is both a good source of protein and also provides several important vitamins and minerals. A 3-ounce serving of pork is an “excellent” source of thiamin, selenium, protein, niacin, vitamin B6 and phosphorus, and a “good” source of riboflavin, zinc and potassium.

Ingredients

  • Pork chops- I like to use a thick cut chop, but regular works as well, but you will need to decrease cook time to 15 minutes.
  • Apples- tart firm apples, like macintosh, work best
  • Yellow onion- a yellow onion will provide sweetness, but white will also be a delicious substitute.
  • Honey- maple syrup is a delicious substitute for honey.
  • Dijon mustard
  • Butter
  • Salt
  • Pepper
  • Dried parsley- fresh parsley, finely chopped, works well too.

Why choose pork chops?

Pork chops are easy to prepare and it makes them one of the most popular pork cuts. The pork chop comes from strip of meat that runs from the pig’s hip to shoulder.

For my Grilled Dijon Pork and Apple Packets I like to use a boneless thick pork chop, but a bone-in pork chop will work as well.

Finally, pork is versatile, and other great options for pork cuts are pork tenderloin or sliced pork loin.

Instructions

  1. Chop apples into medium chunks and slice onions to be about ¼ - ½ inch thick. Set aside.
  2. In a small bowl, mix honey, mustard, salt, pepper, and parsley. Whisk and set aside.
  3. Place one 8-12 inch piece of foil on your work surface. Put another piece over the top to create a cross shape. Place ½ tablespoon of butter in the center of the foil. Place the pork in the middle of the foil.
  4. Top the pork with ¼ of the onions and ¼ of the apples.
  5. Spoon a tablespoon of dijon sauce over the apples and onions. Top with ½ tablespoon of butter. Close the foil packet by bringing opposites sides together and sealing.
  6. Heat grill to 375°F. Place packets on the grill and for about 30 minutes. Remove and carefully open because the inside will be hot. Serve.

How to safely cook pork

Pork that is overcooked can be chewy and not as flavorful. Like many people, I was always told to cook pork well-done. However, that is not necessary, or the preferred way to cook pork.

The safe internal pork cooking temperature for fresh cuts is 145°F. To check doneness properly, use a digital cooking thermometer to measure the temperature at the thickest part of the cut without touching any bone.

Once you have reached the desired internal temperature, remove from heat and let it rest for a few minutes. When sliced, the pork should have a beautiful blush color inside. It will be juicy and full of flavor.

    I love making Foil packets to cook on the Grill or in the Oven. Sometimes I like to cheat and pre-bake and then take foil packets camping so it takes less time. I'm saving this recipe to try
