It is no secret that I love cranberry, and I love any opportunity to include it in my baked goods.
My Cranberry Thumbprint Cookies are perfect for a holiday gift exchange. The cookies and rich and buttery with an orange flavor from the zest.
The filling is a tangy whole berry cranberry sauce and finished with white chocolate and a dusting of powdered sugar.
The flavor combination is incredible and I love how easy these cookies are to make. I love cranberry with orange, and the addition of the white chocolate is delicious!
I am celebrating holiday baking all week with Christmas Cookies Week. A few friends and I are going to make all kids of delicious holiday treats all week!
Ingredients
- unsalted butter - salted butter works fine, but I omit the additional salt from the recipe.
- granulated white sugar
- orange zest - clementine orange zest is also delicious!
- salt
- vanilla extract
- egg yolks
- all-purpose flour
- cranberry sauce - homemade is delicious, but a canned whole cranberry is also yummy.
- white chocolate chips
- powdered sugar
Instructions
- Pre-heat oven to 350°F. Line two baking sheets with parchment paper. Set aside.
- In a stand mixer, mix the butter and sugars till smooth.
- Beat in the zest, vanilla, and egg yolks.
- Slowly add in the flour to the dough and mix till it comes together. The dough should be light in color, soft, but not sticky.
- Shape the dough into 1-inch dough balls. Place on baking sheet 1-inch apart.
- Use your thumb to make an indent in the center of each cookie. Bake for 20 minutes.
- Remove cookies from the oven and allow them to cool. Once cool, add cranberry sauce evenly to indents of the cookies.
- Melt the white chocolate chips in the microwave in 20 second intervals until smooth. Drizzle white chocolate over the Cranberry Thumbprint Cookies.
