Gingerbread Cookie Bars

My Gingerbread Cookie Bars are one of my favorite holiday treats! Chewy cookie texture and topped with a homemade cream cheese frosting.

I love all thing gingerbread. Cookies, cakes, breads...lattes! You name it and I am a fan. I love my recipe for Gingerbread Cookie Bars too!

The cookie part is moist and chewy. It is filled with flavors from the molasses, ginger, cinnamon, cloves, and nutmeg.

The spice combo is offset by a homemade cream cheese icing. I love this recipe because it is not too runny and spreads perfectly over the top of the bars.

I love to add a few festive sprinkles as well.

I am celebrating holiday baking all week with Christmas Cookies Week. A few friends and I are going to make all kids of delicious holiday treats all week!

Ingredients

Gingerbread Cookie Bar

  • brown sugar
  • salted butter
  • large eggs
  • vanilla
  • milk
  • molasses
  • all-purpose flour
  • baking powder
  • baking soda
  • cinnamon
  • ginger
  • ground cloves
  • ground nutmeg

Cream Cheese Frosting

  • cream cheese
  • unsalted butter
  • vanilla extract
  • powdered sugar

Instructions

Gingerbread Cookie Bar

  1. Preheat the oven to 350°F and lightly grease a 9x13 baking dish.
  2. In a medium bowl whisk together the dry ingredients: flour, baking powder, baking soda, cinnamon, ginger, cloves, and nutmeg. Set aside.
  3. In a large bowl or stand mixer, beat the brown sugar, eggs, butter, milk, vanilla, and molasses.
  4. Slowly add the flour mixture while mixing.
  5. Pour batter into the prepare pan and bake for 22-24 minutes. An inserted toothpick should come out free of uncooked dough. It may have a few crumbs.
  6. Remove from oven and allow the gingerbread to cool completely before icing. Top with festive sprinkles.

Cream Cheese Frosting

  1. Cream butter, cream cheese, and vanilla in a bowl with a hand or stand mixer till smooth.
  2. Add powdered sugar a ½ cup at a time till smooth and fluffy. Do not overmix.

Gingerbread Cookie Bar

  • 1 cup brown sugar, packed
  • ¼ cup salted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla
  • 3 tbsps milk
  • ⅓ cup molasses
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon ginger
  • ½ teaspoon ground cloves
  • ¼ teaspoon ground nutmeg

  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • ½ teaspoon vanilla extract
  • 2 ½ cups powdered sugar
