This month I am participating in the Fantastical Food Fight. The theme for this month is PASTA, and it is appropriate considering October is National Pasta Month. I really enjoy this challenge because it is a fun opportunity to connect with other bloggers, and use a like theme, but get a large variety of recipes.
I am all about simplicity, and this month I made one of my families favorite recipes. Cheesy, Sausage Tortellini.
This recipe combines cheese tortellini, smoked turkey sausage, tomato sauce, and a little cream. It is also ready in under 3o minutes. Yes. 30 minutes. To me, under 30 minutes and my kiddos love it- sign me up! As I said, this recipe uses cheese tortellini, but I have experimented with other fillings like spinach and Italian sausage. Both worked well, but I prefer the simple flavor of the cheese with the smoked turkey sausage. I love to serve this meal with a big Caesar salad to balance the hearty pasta and sausage.
I have to tell you the funny experience I had when I first introduced my boys to tortellini, mind you they have eaten it since they were very little but do not remember, they were totally freaked out by the shape, and thought I had served them ravioli that someone stepped on. I had to repeatedly explain pasta variations, and they finally tried it and stated that it was the best ravioli they ever had.
I am marking that as a win. Kids are so odd sometimes.

Cheesy Sausage Tortellini
Ingredients
- 1 tablespoon olive oil
- 1 lb smoked turkey sausage, sliced into bite sized rounds
- 1 clove garlic, minced
- 1 ⅔ cups chicken broth
- 15 oz can of tomato sauce
- ¾ cup heavy cream
- 18 oz cheese tortellini
- salt and pepper, to taste
Instructions
- Heat olive oil in a large rimmed skillet over medium heat.
- Add sausage and brown on both sides. Add garlic and stir until golden, about 20-30 seconds.
- Add broth, tomato sauce, cream, tortellini, and stir to combine. Bring to a light simmer.
- Cover and simmer over low heat for 15 minutes until tortellini are tender and sauce has reduced.
Notes
The sauce will become thicken as the pasta cools.
Half and Half can be substituted, but it will result is a slightly thinner sauce.

My daughter, mind you who loves all pasta/cheese, would refuse to eat tortellini when she was younger and we told her it was tort-tol-eoni. For some reason, mispronouncing it worked and she ate it 🙂 Kids are odd! haha
I didn't eat smoked sausage/kielbasa as a kid, but I love it now, so I definitely want to try this recipe asap! I feel like I haven't had a good sausage recipe on my meal plan lately!
