Slow Cooker Creamy Tortellini and Sausage Soup

My Slow Cooker Creamy Tortellini and Sausage Soup is filled with cheese tortellini, savory sausage, tomatoes, and spinach cooked in a creamy broth. Cooked in a slow cooker, and perfect for an easy weeknight meal.

I am a slow cooker lover- it is one of my favorite kitchen gadgets. Like most people with young kids, our evenings get busy and I love having a few great go-to slow cooker recipes.

My family and I loves pasta lovers, and we are also soup lovers. Combining to two always leads to a good dinner with little refusals from the kids.

My Slow Cooker Creamy Tortellini and Sausage Soup is one of my favorite slow cooker soup recipe. Cheese tortellini, savory sausage, diced tomatoes, tomato sauce, and fresh spinach are slow cooker in a creamy broth.

The flavors in this soup are delicious, and I love when we have some leftoves because the pasta soaks up so much of the yummy broth.

I love to utilize my slow cooker for this recipe, but it can easily be made on the stove top, and I have included those instructions in the recipe below.

Ingredients

  • refrigerated cheese tortellini- I love cheese filled, but spinach or meat filled work great too.
  • canned petite diced tomatoes- regular diced tomatoes work well too, but I prefer the smaller pieces.
  • canned tomato sauce
  • chicken broth- regular or low sodium works well.
  • ground mild Italian sausage- hot or medium sausage works well too.
  • cream cheese- I prefer full fat, but reduced-fat works well too.
  • fresh baby spinach- frozen spinach works for this recipe, but I prefer the texture and flavor of fresh.

Tips to Lighten-Up The Ingredients

  • Try Italian seasoned turkey or chicken sausage in place of pork sausage.
  • Use whole wheat tortellini in place of regular pasta.
  • Opt for a reduced-fat cream cheese in place of the full-fat cream cheese.
  • Use a reduced sodium chicken broth.
  • Try vegetable broth and chopped mushrooms in place of the sausage for a vegetarian friendly soup.

Instructions

  1. In a medium skillet, brown the sausage, breaking it a part with a wooden spoon.  
  2. In a slow cooker, add tortellini, tomatoes, tomato sauce, chicken broth, and cooked sausage. Stir to combine.
  3. Cook on low for 4 hours or high for 2 hours.
  4. Add cream cheese and stir gently. Allow the cream cheese to melt into the broth for a few minutes.
  5. Add spinach and stir gently. Allow spinach to wilt and cook for a few minutes. Serve in soup bowls.

What to Serve With The Soup

I love to serve this soup with salad and a nice crusty bread.

  • 20 oz container refrigerated cheese tortellini
  • 14.5 oz can petite diced tomatoes
  • 8 oz tomato sauce
  • 4 cups chicken broth
  • 1 lb ground mild Italian sausage
  • 8 oz cream cheese cut in 1 oz chunks
  • 4 oz baby spinach

Instructions

    I love this soup! I love that you added tortellini and that it can be made in the slow cooker. The suggestions to make this vegetarian are awesome, too.

    Hmm, I think if I hide the adding cream cheese step my husband will devour this and be none the wiser. The kid will love it because PASTA!
