Looking for a simple recipe to use leftover turkey that is ready in under 30 minutes? My Turkey Cranberry Apple Salad is a delicious for an easy lunch or quick dinner. Filled with turkey, dried cranberries, tart apples, crisp celery, and tossed in a creamy poppy seed dressing makes a delicious recipe using leftover turkey!

Thanksgiving leftovers are one of the best parts of the holiday. However, I can only east so many plain turkey sandwiches, but I still want a quick lunch!

I love to make my Turkey Cranberry Apple Salad. This is not a green salad, but is similar to chicken salad, but uses leftover turkey. Of course, you could use chopped cooked chicken if you do not have turkey leftovers.

This is salad is so delicious and easy to make. I love the combination of sweet and savory flavors. I love to add a little fruit and celery to salads using poultry. The crunch is tasty, and I love the contrast with the creamy dressing.

My dressing is a simple mayo and sour cream base. I sweeten with a little sugar, season with salt and pepper, and add some poppy seeds as well!

I love to eat this salad out of a bowl, on a bun, or on a croissant.

Ingredients

  • cooked turkey
  • celery
  • apple
  • dried cranberries
  • mayo
  • sour cream
  • sugar
  • salt
  • pepper
  • poppy seeds

Tips on Turkey!

I like to use roasted white meat turkey, but dark meat works as well. If you are using dark meat make sure to remove any fat to avoid unpleasant bites.

Chicken can be used in place of turkey if that is your preference.

Instructions

  1. Place all ingredients in a large bowl besides the mayo, sour cream, sugar, salt, pepper, and poppy seeds. Stir.
  2. Mix the mayo, sour cream, sugar, salt, pepper, and poppy seeds in a bowl.
  3. Pour dressing over salad ingredients. Gently mix till evenly coated.
  4. Cover and chill in the fridge for 30 minutes. Serve.

Turkey Cranberry Apple Salad

Ingredients
  

  • 3 cups cooked chopped turkey
  • 2 stalks celery, chopped
  • 1 large apple, chopped
  • ⅓ cup dried cranberries
  • ½ cup mayo
  • ½ cup sour cream
  • 2 tablespoon sugar
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon poppy seeds

Instructions

    The apples and dried cranberries sound tasty mixed with the turkey and celery. And I am always a fan of mayo and sour cream together, creamy, zippy and tangy!

    Ohhh yumm!! I love chicken salad - I am not sure if it's ever crossed my mind to use turkey in a similar fashion - that looks so perfectly creamy!
