Apple Cranberry Spinach Salad is a delicious and healthy salad using my favorite fall flavors. Topped with a homemade apple cider cranberry dressing.
I love making fresh salads for lunch. Simple, quick, and easy! My Apple Cranberry Spinach Salad is one of my very favorites.
It is packed with fall favorites like apples and cranberries. It is topped with a homemade maple cranberry dressing made with apple cider vinegar.
I top the salad with lots of crunch from toasted pecans and a nice bite from crumbles feta cheese.
Ingredients
For Salad:
- fresh baby spinach
- tart apples
- toasted chopped pecans
- crumbled feta cheese
- dried cranberries
For Dressing:
- olive oil
- apple cider vinegar
- maple syrup
- jellied cranberry sauce
- dijon mustard
- black pepper
Instructions
For the Dressing:
- Whisk together all the dressing ingredients. Set aside till ready to serve. The dressing can be made 2-3 days in advance.
For Salad:
- Place spinach into a large bowl.
- Cut the apples into thin slices. Top the salad with sliced apples, pecans, cheese, and cranberries.
- Next, top the salad with the dressing and toss to evenly mix the ingredients. Serve.
