Zucchini and Hamburger Stew

Zucchini and Hamburger Stew is a delicious way to use your summer zucchini. The stew is thick, hearty, and packed with zucchini and tomato flavor. Ready in 30 minutes!

Zucchini and Hamburger Stew is one of my favorite recipes to use garden veggies. This zucchini stew is packed with fresh zucchini, bell pepper, and tomatoes. It is a fantastic way to showcase summer vegetables in a quick and easy meal.

Ready in 30 minutes makes my hamburger stew perfect for a weeknight meal. The flavors are robust and make delicious leftovers as well.

This recipe is very adaptable and it is easy to add additional garden veggies to the stew to accommodate what you have on hand.

Ingredients

  • olive oil
  • lean ground beef - ground turkey, chicken, or plant based protein can be used.
  • medium onion
  • green bell pepper - red, yellow, or orange can be substituted.
  • cloves garlic
  • tomato based pasta sauce - I love Rao's marinara sauce for Zucchini and Hamburger Stew.
  • soy sauce
  • reduced sodium beef broth
  • zucchini - I like to use 3 medium, but use what you have on hand because it is delicious with a little more or a little less.
  • italian seasoning
  • bay leaf
  • black pepper
  • salt
  • shredded cheese and sour cream, for topping

Ingredients Tips

This recipe is a low-carb stew. However, you can add pasta or serve the stew over rice.

Other veggies that are delicious to add are: celery, potatoes, spinach, swiss chard, kale, squash.

Instructions

  1. In a dutch oven or soup kettle, add the olive oil, beef, onion, and pepper. Cook till the meat is no longer pink and veggies are tender.
  2. Add the garlic and zucchini and cook for an addition 2 minutes.
  3. Add all remaining ingredients. Cover and simmer on medium-low for 20 minutes.
  4. Serve in bowls and top with cheese and sour cream.

Zucchini and Hamburger Stew

Ingredients
 
 

  • 1 tablespoon olive oil
  • 1 lb lean ground beef
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 24 oz tomato based pasta sauce
  • 1 ½ tablespoon soy sauce
  • 14.5 oz can reduced sodium beef broth
  • 3 medium zucchini, halved and chopped
  • 1 teaspoon italian seasoning
  • 1 bay leaf
  • 1 tsp black pepper
  • ½ teaspoon salt (optional)
  • shredded cheese and sour cream, for topping
