I love vegetable soup. It is so easy for a weeknight dinner and packed with lots of good vegetables. I love to pack my soup with carrots, onion, green beans, potatoes, tomatoes, and pea.
I have been trying to do more reading and My Easy Vegetable Soup reminds of a scene in Girl with a Pearl Earring by Tracy Chevalier, which is a favorite book of mine.
The story features a young girl named Griet. Griet's family is hampered by her father's inability to work due to an accident and Griet begins to work for the painter Vermeer as a maid. There is a part of the story when Griet is chopping vegetable for a soup and Vermeer notices that she has arranged them by color. Being an artistic man he is taken by this and Griet works for him. Griet and Vermeer's relationship grows and she eventually becomes a model for him to paint. I always loved that he noticed the veggies organized.
I always enjoy food discretions in books because they are so easy to visualize for me.
My Easy Vegetable Soup is perfect for a quick and simple weeknight recipe. This veggie heavy soup was filled with colorful veggies, and was a big hit with my husband and boys. I also love that this soup is that it freezes well.
This vegetable soup is also a perfect soup to bring to a soup swap. Simple flavors are make it perfect for pleasing multiple tastes.
Ingredients
- medium onion
- celery
- carrots
- olive oil
- medium potatoes
- tomato paste
- vegetable stock or chicken broth
- canned diced tomatoes
- frozen corn
- frozen green beans
- frozen peas
- Salt and pepper
Instructions
- In a soup pot, heat oil and add onion, celery and carrots. Saute till veggies start to become tender and onions are translucent.
- Add potatoes and tomato paste and stir till coated well. Add stock or broth (depending on what you use) followed by tomatoes, corn, beans, and peas.
- Allow soup to come to a low simmer and cook for about 15-20 minutes or until all veggies are tender. Season with salt and pepper. Ladle into bowls and serve with crusty bread.

You can never go wrong with vegetable soup. Just add a grilled cheese sandwich or some buttered crackers, and I'm all in!!!
