My Blueberry Turnover is a delicious addition to the breakfast table. Fresh blueberries baked in puff pastry and glazed.

I love turnovers, and a blueberry turnover is one of my favorites. They are so easy to make and I love to make them for my family as a sweet treat.
This recipe uses fresh blueberries and I do not make a cooked filling. I add a little sugar and cornstarch to sweeten and thicken the berries as they cook.
My turnovers are glazed and it provides just the right amount of sweetness and keeps the delicious fresh blueberry flavor.
Ingredients
- frozen puff pastry - this will create a light a airy blueberry turnover.
- fresh blueberries - I prefer fresh for this recipe. Frozen blueberries will have additional liquid.
- granulated white sugar - for a slightly sweet filling
- cornstarch - this will help thicken the filling as it cooks in the oven
- egg + water - egg wash helps seal the blueberry turnover and give the pastry a golden brown top
- powdered sugar - creates the best glaze!
- milk - water works as well. Lemon, lime, or orange juice can be used for a light citrus flavor in the glaze. Vanilla extract is also delicious.
Instructions
- Preheat oven to 400°F. Line two baking sheets with parchment paper or a baking mat. Set aside.
- In a bowl, mix the blueberries, sugar, and cornstarch together. Set aside.
- Unfold the puff pastry and cut into nine pieces. Take a piece and work the dough into an even square.
- Add 1 ½ tbsps of the blueberry mixture to the dough square. Use a brush to brush some egg wash around the edge of half the dough square.
- Gently fold the dough in half and seal it with the prongs of a fork. Make sure there are no open parts and the turnover is sealed.
- Repeat process with remaining pieces of dough. Place the blueberry turnovers on the baking sheets.
- Brush the top if each turnover with remaining egg wash.
- Bake for 20 minutes. Remove from oven and allow the blueberry turnovers to cool before glazing.
- Whisk together the powdered sugar and milk.
- Use a spoon and drizzle the icing over the turnovers. Allow icing to set before serving.
