Raisin Bran Muffins are a hearty, filling, and slightly sweet. A perfect breakfast muffin to fill bellies in the morning.

This recipe for Raisin Bran Muffins is so easy- no mixer needed and a great way to use up that last cup of cereal in the box.

The raisin bran actually soaks in the milk till soft and creates a dense and rich muffin- perfect for breakfast. This recipe makes 6 regular sized muffins and that is perfect for my family, but it is an easy recipe to double if you want more muffins.

I love to bring these to eat on the way to work, and they freeze really well too.

Ingredients

  • Raisin Bran Cereal
  • Whole Milk
  • Vegetable Oil
  • All-Purpose Flour
  • Baking Powder
  • Cinnamon
  • Egg
  • Brown Sugar

Optional Mix-Ins

  • Chocolate Chips
  • White Chocolate Chips
  • Chopped Nuts
  • Toasted Coconut
  • Additional Dried fruit- like extra raisins, craisins, or dried cherries
  • dry raisin bran
  • raisin bran with milk
  • muffin ingredeints
  • muffin batter
  • uncooked muffins in pan

Instructions

  1. Preheat oven to 400 degrees. Lightly grease and flour a 6 cup muffin tin and set aside.
  2. Pour the cereal into a mixing bowl and soak cereal in milk for about 5 minutes. Add remaining ingredients and mix well
  3. Spoon batter equally into 6 muffin cups. Bake for 20 minutes.

Frequently Asked Questions

Can I use a different type of milk?

I like to use whole milk in this recipe, but low-fat will work well. Almond, coconut, or oat milk can also be used.

Can I use whole wheat flour?

Yes, whole wheat works well, or a combination of all-purpose and whole wheat.

Can I use melted butter in place of the oil?

Yes, melted butter works well in place of the vegetable oil.

Can I use granulated white sugar?

Yes, granulated white sugar works in place of brown sugar, but I really love the extra flavor from the brown sugar in Raisin Bran Muffins.
