One of my favorite things about fall is the apples. I know pumpkins are the big show, and I love them, but apples are probably my favorite. I mentioned in previous posts that our old house had apple trees, and how much I miss them now that we have moved! We did not plant new ones yet, and it normally takes a few years to have a tree that produced more than an apple or two. Until then we plan to hit up the orchard for our apples. I have memories growing up and my parents stored our picked apples in a cellar a fruit type of cellar in the basement. I remember the smell of the delicious apples in the cool room when you opened the door. That is still one of my favorite smell memories to this day. I think that memories associated with smell are always vivid and it is nice when it is a good memory!
One of my favorite ways to use a bunch of fresh apples is to make cinnamon apples. I use my Instant Pot, but you could use a slow cooker and set it to low for about 4-5 hours. These cinnamon apples are a delicious ice cream topping or can be eaten on their own. They aren't an apple sauce, but still a bit broken down. I love that there are large apple pieces to make a flavorful topping, or a hearty snack or treat.
This recipe is one of those dump it in the Instant Pot and let it cook. Hardly any mess or fuss, and it is ready in under 10 minutes.

I mean, look at that beautiful color and texture. Yum. It makes me want to go and whip-up a batch right now and pour it over creamy vanilla ice cream.
However, we have not had a chance to pick out apples yet, and I am hoping we can get out there during the week on next Saturday. This weekend was almost 90 degrees, and the mosquitoes are insane! We normally have a good amount in the summer, but I have never seen swarms in September I thought they were nats! Poor Rowan is covered with bites, and that is with a layer of repellent. While we enjoyed the burst of warm weather, but bites are not as enjoyable....
We have had a fun weekend so far. Kellen and I went to see the second Harry Potter movie because they are re-releasing them until the new one comes out in November. Kellen is really enjoying them, and for $5 it is a steal! We unfortunately will miss a few weekends, but we are planning a movie night at home so we are caught up. I was a little bummed that one of the movies we will miss is the 4th one, and it is my favorite of the franchise. I am loving that Kellen is getting into it and it makes me excited for when I can introduce my other favorites like Lord of the Rings and Alien. This weekend we took my Dad to see Predator, and enjoyed it. I heard some people saying how horrible it was when we left, but I didn't mind it. I kind of feel when you are a fan of the Alien and Predator franchise you take the good with the bad. I also saw a preview for the new Halloween movie, and it looks really good. As you can see I am a sci-fi movie fan....actually many franchise movies I like because I like the continuing characters because sometimes one and done is not enough! Thankfully, I can force Ron to watch most of the movies with me, and my Dad and sister are big fans as well.
The remainder of our weekend is birthday parties, barre class, and school work for me. Our kitchen re-face is happening the last week of September so I am scrambling to re-pack everything so we are ready for our contractor. I can tell you that I will be happy when our final project is complete, and am excited to show it to you!

Instant Pot Cinnamon Apples
Ingredients
- 6 apples, we used granny smith
- 2 teaspoon ground cinnamon
- 1 ½ tbsps brown sugar
- ⅓ cup water
Instructions
- Peel, core, and slice apples. Place apples into the instant pot.
- sprinkle cinnamon and brown sugar over apples.
- add water and stir to coat.
- Place cover on the pot and cook on high pressure for 3 minutes. Immediately release pressure manually. Serve while warm.

I love cinnamon apples. My kids have it every year warm cinnamon apples topped with ice cream in winter. Nothing beats that taste of fresh cinnamon and apples. This looks so good.

Yum! I can totally imagine how spectacular these must smell. I would put them on ice cream, on top of oatmeal, and even on top of cottage cheese.
