Lemon Butter Salmon

Ingredients

For Roasted Salmon

  • 1 ¾ lb fresh salmon
  • 2 tbsps olive oil
  • 1 teaspoon salt
  • 1 tsp black pepper

For Lemon Butter Sauce

  • 4 tablespoon butter
  • 2 cloves garlic, minced
  • 2 tablespoon fresh lemon juice
  • ½ tsp black pepper
  • 1 tablespoon finely chopped fresh parsley

Instructions

Roasted Salmon

  • Pre-heat oven to 425°F.
  • Cut salmon into equal portions.
  • Rub the salmon with olive oil and season with salt and pepper and place on a baking sheet.
  • Bake for 12-14 minutes. The salmon should be flaky and crisp around the edges.

Lemon Butter Sauce

  • While salmon is baking prepare the lemon butter sauce.
  • In a sauce pan, add 4 tablespoon of butter to 2 cloves of minced garlic. Cook over medium heat till fragrant, about 2 minutes.
  • Whisk in fresh lemon juice, chopped parsley, and black pepper. The sauce will thicken. Remove from heat. Set aside while the salmon finishes cooking.

Assembly

  • Plate the salmon and pour the warm lemon butter sauce over the salmon. Serve.
