Strawberry Rhubarb Bread

  • ¾ cup brown sugar packed
  • cup canola or vegetable oil
  • 1 egg
  • ½ tsp vanilla
  • 1 tbsp white rum optional
  • 1 ¼ cup flour
  • ½ tsp salt
  • 1 tsp baking soda
  • ¼ cup sour cream
  • cup diced rhubarb
  • cup chopped strawberries


  • Line a 9x5-inch loaf pan with parchment paper or grease with cooking spray. Pre-heat oven to 350°F.
  • Beat together the brown sugar, vegetable oil, egg, vanilla, sour cream, and rum. Combine the flour, salt and baking soda in a bowl. Add dry ingredients to wet mixture and mix .Gently fold the in strawberries and rhubarb. The batter will be thick.
  • Bake for about 50-55 minutes.
