Elf Chocolate Chip Peppermint Cookies

Servings 48 cookies

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ cup room temperature salted butter
  • 1 tablespoon maple syrup
  • cup packed brown sugar
  • cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • cup chocolate chips
  • ¼ cup peppermint baking chips

Instructions

  • Preheat the oven to 350°F. Line a baking sheet with parchment paper or a baking mat. Set aside.
  • In medium bowl, whisk the flour and baking soda together.
  • In the bowl of a stand mixer, mix the butter, sugars, vanilla, and maple syrup together until fluffy and creamy. Add the egg and mix till combined.
  • Slowly mix in the flour and baking soda. Stir in chocolate chips and peppermint baking chips.
  • Using about 1 ½ tablespoon of cookie dough, use your hands to roll the dough into a ball. Place cookies on the prepared baking sheets.
  • Bake for 7-8 minutes. The cookies will be brown on top. Remove from oven and transfer to a cooling rack or on parchment paper.
  • Store in a sealable container.
