Pre-heat oven to 350°F. Line a 9x5 loaf pan with parchment paper, or spray with non-stick baking spray.
In a mixing bowl, sift or whisk together the flour, baking powder, baking soda, coffee grounds, salt, and cinnamon. Set aside.
In a large mixing bowl or stand mixer, beat together the vanilla, coffee, eggs, sugars, and oil till smooth.
Slowly add in the dry ingredients until just combined.
Fold in the toffee pieces.
Pour the batter into the loaf pan. Top with additional toffee pieces, if desired. Bake for 60 minutes. Remove from oven and allow the bread to sit in the pan to slightly cook before transferring to a cooling rack.
