Crock Pot Jambalaya

Ingredients

  • 1 onion chopped
  • 1 green bell pepper chopped
  • 2 stalks celery sliced
  • 3 garlic cloves minced
  • 2 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • 1 teaspoon cayanne pepper
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 2 Tbsps chopped fresh parsley
  • ½ cup chicken stock
  • 1 lb chicken andouille sausage sliced
  • 1 quart canned diced tomatoes
  • 1 lb shrimp, peeled

Instructions

  • Add onion, celery, bell pepper, and garlic to crockpot. Add all spices and herbs. Add chicken stock and stir well. Cover the mixture with sausage and then tomatoes. Cover and cook on low for 7-8 hours. Add the shrimp during the last 30 minutes of cook time. Serve with rice.
