Pumpkin Zucchini Muffins

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ¼ teaspoon cinnamon
  • ½ cup vegetable oil
  • ½ teaspoon vanilla
  • 1 cup sugar
  • ¼ cup unsweetened applesauce
  • 2 eggs
  • 1 cup pumpkin puree
  • 1 cup grated zucchini

Instructions

  • Pre-heat oven to 350 degrees F.  Lightly grease a 12 muffin tin. Set aside
  • Sift together flour, baking powder, baking soda, salt, and cinnamon in a medium bowl.  
  • Using a hand mixer or a standing mixer, beat the oil, vanilla, sugar, and applesauce together. 
  • Next, add the eggs, pumpkin, and zucchini. Mix till just incorporated.  
  • Slowly add flour to batter.  Mix to incorporate ingredients together. 
  • Fill each muffin cup ¾ full with batter. Bake for 20 minutes. Remove from oven and transfer muffins to a cooling rack to cool.
