Greek Orzo with Feta and Tomatoes

Ingredients

  • 1 cup uncooked orzo pasta
  • 2 ½ cups low-sodium chicken broth
  • ½ cup feta, plus extra for sprinkling
  • 1 cup halved cherry tomatoes
  • 1 ½ teaspoon Greek seasoning
  • Salt and Pepper, to taste

Instructions

  • In a medium pot, stir orzo and chicken broth together.
  • Cook over medium-high heat, and bring to a simmer. The orzo will slowly soak in the broth. Allow orzo to simmer for 10 minutes, occasionally stirring, until broth is absorbed.
  • Remove from heat and gently stir in feta, tomatoes, and Greek seasoning.
  • Season with salt and pepper if desired. Serve warm or chill to serve as a cold pasta salad.

Notes

If you opt to serve this cold you can wait to add the tomatoes because the heat will cause them to slightly break down.
Vegetable broth can be substituted for chicken broth.
