Italian Sub Salad

Ingredients

For Salad:

  • 5 cups shredded iceberg lettuce
  • 5 cups shredded romaine lettuce
  • ½ lb thin sliced ham, chopped
  • 4 oz salami, sliced and chopped
  • cup pepperoni, halved
  • 2.25 oz sliced black olives
  • ¼ cup sliced green olives
  • 8 oz fresh mozzarella pearls
  • ¾ cup halved grape tomatoes
  • cup jarred pepperoncini, chopped
  • ½ tablespoon dried oregano
  • 2 tablespoon grated parmesan cheese

For Dressing:

  • ½ cup extra virgin olive oil
  • ¼ cup red wine vinegar
  • 2 tbsps mayonnaise
  • 1 tablespoon honey
  • ½ teaspoon salt
  • ½ tsp black pepper
  • 1 teaspoon italian seasoning
  • ¼ teaspoon garlic powder

Instructions

For Dressing:

  • Whisk all ingredients into a bowl. Set aside while the salad is prepared. The dressing can be made 3 days in advance and stored in a sealed container in the fridge.

For Salad:

  • Place lettuce in a large bowl. Make sure the bowl is big enough to fit all ingredients and to toss in the dressing.
  • Top with mozzarella, pepper, meats, tomatoes, and olives.
  • Pour dressing over the salad and toss to evenly coat. Sprinkle grated parmesan and dried oregano on the top of the salad and serve.
