Slow Cooker Cream Cheese Chili Chicken

Ingredients

  • 1 ½ lbs boneless skinless chicken breasts
  • 15 oz can of black beans, rinsed and drained
  • 15 oz can of corn
  • 10 oz can of Rotel
  • 1 cup chicken broth
  • 1 oz ranch seasoning packet
  • 1 teaspoon cumin
  • 1 ½ tablespoon chili powder
  • 1 teaspoon onion powder
  • 1 tsp garlic powder
  • 8 oz cream cheese
  • Shredded cheese, sour cream, and tortilla chips for topping

Instructions

  • Place chicken breasts at bottom of the slow cooker.
  • Add black beans, corn, and Rotel tomatoes. It is not necessary to drain the corn or the Rotel.
  • Sprinkle the ranch packet, cumin, chili powder, onion powder, and garlic powder over the ingredients in the slow cooker. Pour chicken broth into the slow cooker.
  • Place the cover on the slow cooker and cook on low for 6-8 hours. During the final 30 minutes of cooking remove the chicken and shred.
  • Add the cream cheese to the slow cooker with the shredded chicken and cook the remaining 30 minutes.
  • Serve in bowls with cheese, sour cream, and tortilla chips.
