Almond Joy Cookies

  • 14 oz bag shredded sweetened coconut
  • 1 ½ cups semi-sweet chocolate chips
  • ¾ cup chopped almonds
  • 14 oz can sweetened condensed milk


  • Preheat oven to 325°F.
  • Line baking sheet with parchment paper. This is important because the cookies will stick to the pan.
  • In a medium mixing bowl, mix together the coconut, chocolate chips, almonds, and sweetened condensed milk.
  • Spoon the dough on a lined baking sheet. Use your fingers to create a ball shape.
  • Bake for 12 minutes. The cookies will start to brown on the top and on the edges.
  • Allow the cookies to rest for about 3-4 minutes before moving them to the cooling rack.
  • Store in an airtight container.
