Roasted Potatoes with Lemon Oregano and Feta

  • 2 lbs russet potatoes quartered
  • ¼ cup fresh lemon juice
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • ¼ cup olive oil
  • ½ cup crumbled feta cheese


  • Pre-heat oven to 375°F.
  • Lightly spray a baking sheet with cooking spray and set aside.
  • Place potatoes into a large bowl. Toss with lemon juice, oregano, salt, pepper and olive oil until evenly coated.
  • Arrange potatoes on the baking sheet and place in the oven. Roast for 40-50 minutes flipping the potatoes after 20 minutes.
  • Remove potatoes from oven and transfer to a serving dish.  Top with feta and enjoy.
