Cranberry BBQ Chicken Sandwiches

  • 1 ½ lbs boneless skinless chicken breasts
  • 14 oz canned jellied cranberry sauce
  • 1 cup BBQ sauce
  • 1 tbsp Dijon mustard
  • 1 tsp hot sauce
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • ½ tsp salt
  • cup chicken stock
  • cup french fried crispy onion toppers
  • 8 slices pepper jack cheese


  • Whisk cranberry sauce, bbq, mustard, hot sauce, salt, pepper, garlic powder, and chicken stock in a medium bowl.
  • Place chicken into the crockpot and pour the sauce over the chicken.
  • Cook on low for 6-7 hours. Remove chicken from the crockpot and shred
  • Place chicken back into the crockpot and stir to make sure it soaks in all the sauce.
  • Serve on toasted buns. Top with sliced pepper jack cheese and crispy french fried onion toppers.
