Pasta with Tomato Blue Cheese Sauce

  • 1 lb Pasta
  • 1 tbsp Olive Oil
  • 2 cloves Garlic Minced
  • 28 oz Canned Diced Tomatoes Drained
  • ½ tsp Sugar
  • ½ tsp Salt
  • ½ tsp Ground Pepper
  • cup Crumbled Blue Cheese
  • ¾ cups Heavy Cream
  • 3 cups Baby Spinach
  • Extra Blue Cheese Crumbles For Garnish


  • Cook pasta according to package instructions.
  • Heat olive oil in a large rimmed skillet over medium heat. Add minced garlic and cook for a minute.
  • Add the tomatoes.
  • Add sugar, salt, and pepper. Cook for 10 to 15 minutes, stirring occasionally.
  • Reduce heat to low. Stir in crumbled blue cheese and cream. Cook for 2 minutes to allow sauce to slightly thicken.
  • Add the pasta and stir.
  • Add spinach and stir to allow the spinach to wilt.
  • Toss in the cooked pasta. Plate and top with additional blue cheese, if desired.
