Grilled Orange Pesto Skirt Steak

  • 1 cup orange juice
  • 1 teaspoon fresh orange zest
  • ½ cup pesto
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 lb skirt steak


  • Combine orange juice, zest, pesto, salt and garlic. Place steak and marinate into a sealable bag and place in fridge to marinate for 8 hours*. 
  • When ready to grill, remove steak from bag and discard marinate.
  • Heat grill to high and grill steak 3-4 min minutes per side. For medium rare, temp to 135°F.
  • Remove meat from grill and allow it to rest for a few minutes.  Slice into thin strips about ½- ¾ inch thick against the grain. Serve immediately.


* The steak can marinate for as little as 4 hours, but the flavors will not be as pronounced, but it will still be delicious
