Cook Time 40 minutes
Rising Time 14 hours
Servings 1 loaf

Ingredients

  • 3 cups all-purpose flour
  • 1 ½ teaspoon salt
  • ½ teaspoon yeast
  • 1 ½ cups warm water

Instructions

  • In a medium bowl, gently whisk together the flour, salt, and yeast. Slowly add the water and stir with a wooden spoon to allow the water to absorb and the dough to form. Cover with plastic wrap and rest at room temperature for 12-16 hours. I have found that 14 hours is the sweet spot for the bread.
  • When ready to bake, place an oven safe dutch oven or baking dish with high sides into the oven and preheat to 450 degrees. Allow dish to warm in the oven for 30 minutes.
  • Place dough on a well floured surface and use your hands to form a ball. Place the ball on parchment paper (make sure it is not too large of a piece because it needs to fit in the dutch oven), cover with plastic wrap, and allow it to rest for 15 minutes.
  • Carve an "X" on top of the bread. Carefully transfer the bread on the parchment to baking dish and cover.
  • Bake covered 30 minutes. Uncover and bake 10 more minutes until golden brown.
  • Allow the bread for cool for at least 30 minutes before slicing.
